Which costing methods are available?

FIFO and weighted average. The method is a property of the item, and cost layers are kept so FIFO items retain their remaining quantities.

Can we start from an existing stock position?

Yes. Opening balances and item data can be prepared up front, and stock adjustments record the difference between your old system and this one as explicit movements.
